A traditional Indian drink made with fennel seeds, perfect to refresh, hydrate, and beat the summer heat.
Fennel seeds (saunf), sugar or jaggery, water, lemon juice, and optional rose water or mint for flavor.
Soak 2 tbsp of saunf in a cup of water overnight or for at least 6-8 hours.
Blend the soaked saunf with water and strain using a fine sieve or muslin cloth for a smooth extract.
Add sugar or jaggery to taste. Enhance with a dash of lemon juice and a few drops of rose water.
Mix the concentrate with cold water and ice. Garnish with mint leaves or a lemon slice for an extra chill.

Use filtered water, adjust sweetness to taste, and store the concentrate in the fridge for up to a week.
