Sushi, a culinary icon beloved worldwide, has a history that stretches across centuries and continents, evolving from a simple preservation technique to a global phenomenon. Its journey is not just about food, but about culture, adaptation, and the fascinating ways in which traditions transform as they traverse the globe.

The roots of sushi trace back to Southeast Asia around the 2nd century AD. Originally, it began as a preservation method known as narezushi. The process involved fermenting fish and wrapping it in sour rice, which allowed the fish to be kept edible for months. Interestingly, the rice wasn’t eaten—it was the fish that was prized. This technique was primarily about survival, ensuring that food could last in the absence of refrigeration.

In the 8th century, Japan embraced narezushi, but with an important twist—they began to eat both rice and fish. This marked the birth of namazushi, a precursor to modern sushi. By the 19th century, sushi had undergone another significant transformation. Nigiri sushi emerged, a simple but revolutionary dish: fresh fish placed atop vinegared rice. This sushi was fast, street food that could be enjoyed on the go—lightyears away from the heavily fermented fish of the earlier period. The shift reflected the speed and rhythm of modern life in urban Japan, and nigiri sushi became a staple of the bustling streets, symbolizing the vibrant, quick-paced culture of the time.

But sushi wasn’t destined to remain confined to Japan. After World War II, as the world became more interconnected, sushi began to travel, reaching new shores and gaining international popularity. The first sushi restaurant in the United States opened in 1906 in Los Angeles’ Little Tokyo neighbourhood, marking the beginning of sushi’s transformation into a cosmopolitan cuisine. As it spread across the globe, sushi began to take on new forms and local flavours.

In places like Los Angeles, sushi became a symbol of upscale dining, while in other regions, it blended with local culinary traditions, becoming a global sensation with unique variations everywhere it went.

In India, sushi's journey was initially tied to luxury hotels and the expat community in the early 2000s. It was an indulgence, a fine dining experience that few could afford but many were curious to try. As the years passed, urban millennials in India began embracing sushi, drawn to its novelty, its health benefits, and its cool, international appeal. Sushi in India didn’t just stick to the traditional recipes, though.

Chefs began experimenting, incorporating local ingredients like paneer and corn, creating vegetarian twists on the Japanese classic. This adaptation to local tastes helped sushi gain widespread popularity across the country, from metropolitan cities to smaller towns.

Today, sushi is no longer just a dish; it's a global movement. From Oshizushi (pressed sushi) in Osaka, where the sushi is compacted into a box and then sliced into pieces, to Temaki (hand rolls) in Tokyo, which are enjoyed as casual, handheld meals, sushi continues to evolve.
